Instructions:
- Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper for easy removal.
- In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, milk, Parmesan, onions, mushrooms, bacon, Swiss cheese, eggs, Worcestershire sauce, 1 tablespoon ketchup, garlic powder, thyme, salt, and black pepper. Mix gently until just combined—do not overwork the mixture.
- Transfer the meat mixture into the prepared loaf pan and press it in evenly to shape.
- Spread the remaining ½ cup of ketchup over the top of the meatloaf.
- Bake uncovered for 60 to 70 minutes, or until the internal temperature reaches 160°F (71°C).
- Remove from the oven and let the meatloaf rest for 10 minutes before slicing. This helps retain its juices and makes for cleaner cuts.
Variations:
- Cheese Swap: Use provolone or mozzarella for a milder flavor, or try sharp cheddar for a bold twist.
- Mushroom Medley: Mix in shiitake or cremini mushrooms for deeper flavor.
- Low-Carb Version: Replace breadcrumbs with almond flour or crushed pork rinds.
- Spicy Kick: Add a pinch of red pepper flakes or a dash of hot sauce to the mix.
Tips:
- For maximum flavor, sauté the mushrooms and onions before mixing them into the meatloaf. It removes excess moisture and intensifies their taste.
- Use a meat thermometer to ensure perfect doneness without guessing.
- Line your loaf pan with parchment for easier cleanup and effortless removal.
- Leftovers can be sliced and pan-seared for sandwiches or reheated in the oven to maintain texture.
